Semi-automatic machine for de-boning hams or similar products using an "open" (or better known as "country-style") system. A series of pneumatic devices holds the ham in position making it easier to remove the device and to clean. The surface is made of non-toxic plastic and has a fixed or adjustable ham retractor (on request). Unit designed to be installed on the work surface.
